Cardamom Orange Glazed Medjool Dates

Good dates hardly need help, but a quick marinade makes them feel special enough for a spring table. Orange zest and juice cut through their richness, cardamom adds a floral lift, and a spoonful of nectar gives the skins a lovely shine. Pile them into a wooden bowl and set them out beside a jug of fresh spring flowers.

Method

  1. Step 1: Wipe the dates with a damp cloth to remove any dust, keeping them whole so they hold their plump shape and look inviting in the bowl.

  2. Step 2: Finely zest the orange into a mixing bowl, then squeeze in 2 tablespoons of the juice and add the coconut nectar, cardamom and scraped vanilla seeds.

  3. Step 3: Whisk the glaze until the nectar dissolves, then add the dates and turn them gently with your hands until every surface looks glossy.

  4. Step 4: Cover and leave the dates to marinate at room temperature for 2 hours, turning them once halfway through so they absorb the flavors evenly.

  5. Step 5: Lift the dates into a wooden serving bowl, spoon over any glaze left in the mixing bowl and finish with a light pinch of flaky salt.
