Cucumber, Carrot and Tomato Crudite Platter

Not every salad needs tossing. Lay crunchy vegetables out in neat overlapping rows and let guests pick what they like. Cucumber, carrot and tomato are a reliable trio that nearly everyone enjoys, especially with a thick dill and chive cashew dip in the middle. It is an easy centerpiece for a gathering and can be sliced a couple of hours ahead.

Method

  1. Step 1: Blend the drained cashews with the water, lemon juice, garlic and 1/2 teaspoon salt until silky, then stir in the dill and chives by hand.

  2. Step 2: Slice the cucumbers and tomatoes into rounds about 1/4 inch thick and cut the carrots on a slight diagonal into thinner coins.

  3. Step 3: Arrange the vegetables on a large platter in overlapping rows, keeping each type grouped together so the colors stay distinct.

  4. Step 4: Sprinkle the tomato slices with the remaining salt, spoon the dip into a small bowl in the center of the platter and serve.
