Kale and Cantaloupe Salad with Berries

Melon in a green salad might sound unusual, but ripe cantaloupe softens the mineral edge of kale in the same way a sweet dressing would. A little fresh ginger and lime sharpen things up. Serve it summer-picnic style with a bowl of berries and a few red apples nearby, so people can add extra fruit to their plates as they like.

Method

  1. Step 1: Remove the rind from the cantaloupe, scoop out the seeds and cut the flesh into even cubes about 3/4 inch across.

  2. Step 2: Whisk the lime juice, olive oil, ginger, coconut nectar and a pinch of salt in a large bowl until the dressing looks slightly thickened.

  3. Step 3: Add the baby kale to the bowl and toss lightly with your fingertips, just enough to coat the leaves without bruising them.

  4. Step 4: Fold in the cantaloupe cubes, transfer to a plate, and serve with the berries in a separate bowl and the apple slices on the side.
