Rainbow Sweet Pepper Carpaccio

Mini sweet peppers are at their best when you barely touch them. Sliced into thin rings and laid out like carpaccio, their colors do all the decorating. A punchy dressing of lemon, garlic and good olive oil soaks into every ring while a handful of soft herbs keeps things green and fragrant. Serve it as a shared starter or alongside a bowl of seed pate.

Method

  1. Step 1: Slice the mini peppers crosswise into thin rings, flicking out the seeds as you go. Cut the bell pepper into thin strips of similar width.

  2. Step 2: Layer the pepper rings and strips over a large platter, alternating colors so each section shows red, orange and yellow.

  3. Step 3: Stir the olive oil, lemon juice and grated garlic together, then spoon evenly over the peppers and let them sit for 15 minutes to soften slightly.

  4. Step 4: Just before serving, scatter over the parsley leaves and chives, then season with flaky salt and cracked black pepper.
