Rich Almond Cashew Creamer
4.9(67 ratings)A creamer needs far less water than a drinking milk, so this one comes out thick enough to swirl through a cup of spiced tea without watering it down. Almonds bring flavour and cashews bring body, while a single date keeps the sweetness subtle. Keep a small jug in the fridge and it disappears quickly.

Method

Step 1: Drain and rinse both nuts. Blend the almonds with 1 cup of the water on high for one minute, then strain through a nut milk bag.
-
Step 2: Return the almond liquid to the blender with the cashews, remaining water, date, vanilla, coconut oil and salt.
-
Step 3: Blend for 60 to 90 seconds until the creamer is completely smooth and slightly thickened, with no graininess on the tongue.
-
Step 4: Pour into a small white jug or jar and chill for at least an hour, then stir before serving because it thickens as it cools.
