Round Sun-Dried Tomato Flax Crackers

These look almost like little savory biscuits stacked on linen, but they are nothing more than ground and whole flaxseed bound with a sun-dried tomato puree. A round cutter gives them their neat shape, and the scraps go back into the batter so nothing is wasted. They keep for weeks in a tin and are sturdy enough for the thickest cashew spread.

Method

  1. Step 1: Blend the soaked sun-dried tomatoes, fresh tomatoes, garlic, basil, oregano and salt with half the water into a smooth red puree.

  2. Step 2: Stir the puree into the whole and ground flaxseed in a bowl, add remaining water, and rest 20 minutes until it becomes a thick gel.

  3. Step 3: Spread the mixture 1/4 inch thick on lined dehydrator trays and stamp out rounds with a 2 1/2 inch cutter, leaving them in place.

  4. Step 4: Dehydrate at 115F for 8 hours, then separate the rounds, flip them onto mesh trays and dry another 8 to 10 hours until fully crisp.

  5. Step 5: Break off the scraps between the rounds to snack on, and cool the crackers completely before stacking and storing airtight.
