Method

Step 1: Open the young coconut, strain the water into a jug and scoop out the soft meat, then blend both together until smooth to make a thin coconut milk.

Step 2: Pour half the coconut milk back into the blender with the frozen pineapple, lime juice and half the ice, blend until creamy and pour into the first glass.

Step 3: Without rinsing, add the remaining coconut milk, blueberries, mint, banana, date and ice to the jar and blend until thick and deep purple.

Step 4: Pour into the second glass, top with a mint sprig and serve both drinks together with straws while they are still frosty.
