Broccoli Soup with Sunflower Seeds

Think of this as a raw take on broccoli cheddar soup. Nutritional yeast and a splash of tamari bring the cheesy, savory flavor, while avocado provides body without any cooking. Tender broccoli florets blend surprisingly smoothly when finely chopped first. A generous sprinkle of sunflower seeds and some very small florets on top give the soup texture and a pleasing green-and-gold finish.

Method

  1. Step 1: Set aside a small handful of the tiniest broccoli florets, then finely chop the rest so the blender can break them down evenly.

  2. Step 2: Blend the chopped broccoli, spinach, avocado, nutritional yeast, warm water, lemon juice, tamari, garlic and salt on high until thick and smooth.

  3. Step 3: Taste and add more nutritional yeast for a cheesier flavor or more water to thin, keeping the soup just warm to the touch and well below 115F.

  4. Step 4: Ladle into bowls and top with the reserved florets and a thick scattering of sunflower seeds, then serve right away.
