Celery Juice and Ruby Beet Juice

Celery juice and beet juice are opposites in almost every way, one salty and green, the other sweet and deep red, which makes them a satisfying pair. Pressing them back to back is easy as long as you juice the celery first. A little lemon brightens the celery, while apple and ginger stop the beet from tasting too much like soil.

Method

  1. Step 1: Separate the celery stalks, rinse away any grit near the base and juice them all with the lemon, collecting the juice in its own jug.

  2. Step 2: Without cleaning the juicer, press the apples, ginger and lime, then feed in the beet quarters, which will push the last apple pulp through.

  3. Step 3: Stir each juice well; the beet juice may separate slightly, and the celery juice will have a light froth that can be skimmed off.

  4. Step 4: Pour the celery juice into one ribbed glass and the beet juice into another, over ice if you like, and drink both within 30 minutes.
