Commercial dried apricots are often treated with sulfur to keep them orange, but home-dried ones take on a deeper amber color and a much more concentrated flavor. Pick fruit that is fully ripe yet still firm. The only extra is a quick lemon dip, and the dehydrator handles the rest over about a day, leaving the halves pleasantly chewy.

Method

  1. Step 1: Stir the lemon juice and salt into the cold water, then soak the apricot halves for 5 minutes and drain well.

  2. Step 2: Push each half gently from the skin side so the flesh domes outward, which helps moisture escape evenly.

  3. Step 3: Dust lightly with vanilla and cardamom if using, and place cut side up on mesh dehydrator trays.

  4. Step 4: Dehydrate at 115F for 20 to 24 hours until pliable and leathery with no moist center, then cool and store airtight.
