Clay Bowl Salsa with Avocado Slices

This one sits between a salsa and a light dip. Half the tomatoes are blended smooth with chili and garlic, the rest are chopped and stirred back in, so every scoop has body. Thin avocado slices on top melt into the salsa as you dig in. An unglazed clay bowl keeps it cool, and a few homemade chips finish the table.

Method

  1. Step 1: Blend three tomatoes with the drained chile de arbol, garlic, lime juice and salt until smooth and slightly frothy.

  2. Step 2: Dice the remaining tomatoes and stir them into the blended base along with the red onion and cilantro.

  3. Step 3: Pour the salsa into a clay bowl and let it stand for 5 minutes so the foam settles back into the liquid.

  4. Step 4: Fan the avocado slices over the top and serve with flax-corn chips arranged beside the bowl.
