Blended with kiwi and banana it becomes a thick, creamy smoothie with a pale green hue. The topping of coconut curls, shaved from the same coconut with a vegetable peeler, adds a chewy, snowy finish.

Method

Step 1: Crack the coconut, drain the liquid, then pry the white flesh from the shell and use a vegetable peeler to shave a handful of long, thin curls for topping.

Step 2: Chop the remaining coconut flesh, blend it with the lukewarm water on high for two minutes, then strain through a nut milk bag to make rich coconut milk.

Step 3: Blend one and a half cups of the coconut milk with the spinach and lime juice until smooth, saving any extra milk in the fridge.

Step 4: Add the peeled kiwis, frozen bananas and coconut nectar and blend just until thick and creamy, keeping the kiwi seeds whole.

Step 5: Pour into glasses, fan the kiwi slices over the surface and pile the coconut curls on top, then serve with spoons and straws.
