Cucumber Mint Lime Slush

Frozen green grapes do the work of sugar and ice at once here, giving the slush its sweetness and a fine, granular texture. Peeling the cucumber keeps the color soft and pale rather than murky. Serve it on the hottest afternoons with a sprig of mint and a wide straw, and eat the last icy bit with a spoon.

Method

  1. Step 1: Spread the grapes on a small tray lined with parchment and freeze for at least three hours, until each grape is frozen solid all the way through.

  2. Step 2: Blend the cucumber, mint leaves, lime juice and coconut water on high until completely liquid and the mint has turned into tiny green specks.

  3. Step 3: Add the frozen grapes and ice, then pulse in short bursts, pressing down with the tamper, until the mixture looks like wet snow rather than a smooth puree.

  4. Step 4: Taste for sweetness and pulse in the coconut nectar only if the grapes were tart, then spoon into chilled glasses, tuck in a mint sprig and add a straw.
