Walnuts give milk a deep, slightly woodsy flavour that almonds alone cannot match, and a few almonds soften any bitterness from the walnut skins. Dates round everything out with a gentle caramel note. It is a cosy choice for autumn mornings, chilled or poured over a bowl of soaked buckwheat.

Method

  1. Step 1: Soak the walnuts and almonds together for six hours, then drain and rinse until the water runs clear, which washes away the tannins from the walnut skins.

  2. Step 2: Blend the nuts with the cold water, dates, nutmeg and salt on high for about 90 seconds, until the mixture looks frothy and uniform.

  3. Step 3: Strain through a nut milk bag into a bowl, squeezing firmly, then taste and blend in another date if you prefer it sweeter.

  4. Step 4: Transfer to a bottle and chill well. Walnut milk keeps for two days, so make smaller batches and shake before pouring.
