Step 1: Chill the grapes and water in the fridge for at least an hour before blending, since cold ingredients hold their foam far better than room-temperature ones.

Step 2: Add the water, lime juice, celery and parsley to the blender and process on high until the celery fibers are fully broken down and smooth.

Step 3: Add the romaine and grapes and blend on high for 90 seconds, a bit longer than usual, so the mixture aerates and a thick froth forms on top.

Step 4: Add the ice, pulse just a few times to chill, then pour immediately into glasses, spooning the foam over the top, and serve with straws.
