Hand-Squeezed Valencia Orange Juice

Valencia oranges are juicier and less bitter than navels once squeezed, and rolling them firmly on the counter first releases more juice. Drink it within fifteen minutes, before the flavor starts to fade and turn slightly bitter.

Method

Step 1: Leave the oranges at room temperature for an hour, then roll each one firmly under your palm on the counter to soften the flesh and loosen the juice.

Step 2: Halve the oranges and tangerine crosswise and press each half on a citrus reamer or lever press, twisting until only the membranes remain.

Step 3: Pour the juice through a coarse sieve if you want to remove the seeds but keep some pulp, then stir in the lemon juice and salt if using.

Step 4: Drop the ice into a tall glass, pour in the juice, cut a slit in the orange wheel and slide it onto the rim before serving.
