Iced Matcha Cashew Milk

Unlike a layered latte, this drink is fully blended, so every sip tastes the same soft shade of green. Cashew milk keeps it mellow and creamy, letting the matcha come through as grassy rather than sharp. Make the milk the night before and the whole glass comes together in the time it takes to find a good book.

Method

  1. Step 1: Sift the matcha into a small jar, add the water and coconut nectar, seal and shake hard for 15 seconds until no powder remains visible.

  2. Step 2: Add the chilled cashew milk and vanilla to the jar, seal it again and shake until the mixture turns an even pale green.

  3. Step 3: Fill a tall glass to the top with ice cubes and pour the matcha milk over them slowly so the ice does not crack loudly.

  4. Step 4: Stir once with a long spoon and taste, adding a drizzle more nectar if you like it sweeter, then serve immediately.
