Walnut Pistachio Soaked Oat Groat Jar

Raw oat groats need a long soak, but after that they break down into a porridge with real chew and a mild, nutty sweetness. Blending half and leaving half whole gives the jar a satisfying texture. Walnuts and pistachios on top look lovely against a dark cloth and add a buttery bite to every spoonful.

Method

  1. Step 1: Cover the oat groats generously with water and soak for about 12 hours, then drain and rinse until the water runs clear.

  2. Step 2: Blend half of the soaked groats with the almond milk, dates, cinnamon and salt until thick and creamy.

  3. Step 3: Stir the remaining whole groats into the blended mixture so the porridge has both smooth and chewy elements.

  4. Step 4: Spoon into two glass jars, scatter the walnuts and pistachios over the top and add a thin drizzle of coconut nectar if you like.
