Blueberries hide spinach better than almost any other fruit, so this is the place to be generous with greens. Soaking the chia in almond milk first turns it into a gel that makes the smoothie thick and fiber-rich without extra banana. Screw on the lids and the jars keep well in the fridge for a busy morning or two.

Method

  1. Step 1: Stir the chia seeds into the almond milk in a jar, wait five minutes, stir again to break up clumps and refrigerate for at least 30 minutes to gel.

  2. Step 2: Pour the chia gel into the blender with the spinach and lemon juice and blend until the leaves are fully broken down.

  3. Step 3: Add the frozen blueberries, banana and date and blend on high until thick and deep purple, scraping down the jar once if needed.

  4. Step 4: Divide between two mason jars, scatter a few fresh blueberries on top and serve, or seal and refrigerate for up to 24 hours.
