Method

  1. Step 1: Open the young coconut, pour the water into a jug and scrape out the soft meat, removing any bits of brown shell.

  2. Step 2: Blend the coconut meat, coconut water and date until silky, then add the frozen blueberries and frozen banana.

  3. Step 3: Blend on low with the tamper until thick and glossy, stopping once or twice to scrape down the sides of the jug.

  4. Step 4: Pour into bowls and fan the diagonal banana slices across one side, then add fresh blueberries and a scattering of coconut flakes.
