Kiwi Strawberry Granola Bowl with Mint
4.9(195 ratings)A little baby spinach disappears into frozen banana and mango, leaving a soft green base that tastes purely of fruit. The toppings do the talking here: tangy kiwi, sweet strawberries and a line of crisp sprouted buckwheat granola. Fresh mint leaves lift everything and make the bowl smell as good as it looks.

Method

Step 1: Blend the spinach and coconut water until no green flecks remain, which keeps the finished bowl smooth and evenly coloured.
-
Step 2: Add the frozen banana and mango, then blend on low with the tamper until the mixture is thick enough to hold a spoon upright.
-
Step 3: Divide between two bowls and lay the kiwi rounds along one edge, slightly overlapping, with the strawberry halves beside them.
-
Step 4: Spoon a band of buckwheat granola down the middle and tuck small mint leaves between the fruit just before serving.
