Chard, Parsley and Mango Smoothie
4.4(888 ratings)Once spinach smoothies start to feel tame, this is the next step: more greens, less fruit and a mineral, herbaceous flavor. Chard leaves are earthy, parsley is bright and peppery, and mango keeps the sweetness in check without taking over. The result is almost forest green, so serve it in a tall clear glass to show it off.

Method
-
Step 1: Cut the chard leaves away from their thick ribs, which are stringy and bitter when blended, and chop the leaves roughly.
-
Step 2: Blend the water, lemon juice, cucumber, parsley and date on high until smooth, which prevents parsley from wrapping around the blades.
-
Step 3: Add the chard leaves in two batches, blending well after each, until the mixture is a smooth, dark green liquid.
-
Step 4: Add the frozen mango and flaxseed and blend for another minute, until the smoothie is thick and the flax has disappeared completely.
-
Step 5: Pour into a tall glass, add a metal straw and drink within half an hour, since strong greens start to taste more bitter as they sit.
