Crudite Tray with Cashew Ranch

Soaked cashews blend into a tangy base that tastes remarkably like classic ranch once dill, chives, garlic and a splash of cider vinegar go in. Kept thick, it clings to every vegetable stick. Arrange the crudites in a ring on a round tray with the dip in the center so it looks abundant and colorful, and watch the kids go straight for the peppers.

Method

  1. Step 1: Blend the soaked cashews with water, lemon juice, vinegar, garlic and salt until silky and thick, scraping down the sides once or twice.

  2. Step 2: Transfer to a bowl and stir in the dill and chives by hand so the herbs stay in visible flecks.

  3. Step 3: Chill the ranch for at least 20 minutes while you cut the carrots, cucumber and peppers into even sticks.

  4. Step 4: Set the dip in the middle of a round tray and fan the vegetable sticks around it in alternating colored groups.
