Cucumber Ribbon Rolls with Carrot and Sprouts

No wrappers needed here, since a thin cucumber ribbon curls naturally around its filling and clings on its own. A swipe of garlicky cashew cheese acts as the glue and adds richness to all that crunch. Make them a couple of hours ahead for a party, as they hold up well chilled and still look crisp on the plate.

Method

  1. Step 1: Blend the soaked cashews with the lemon juice, garlic, salt and 2 tablespoons water until very smooth, then stir in the snipped chives.

  2. Step 2: Shave the cucumbers lengthwise into long, even ribbons with a mandoline or wide peeler, discarding the first skin-heavy strips and the seedy center.

  3. Step 3: Lay the ribbons flat on paper towels and blot them dry so the cashew cheese will stick to the surface.

  4. Step 4: Spread a thin layer of cashew cheese along each ribbon, then place a few carrot matchsticks, pea shoots and arugula leaves at one end.

  5. Step 5: Roll the ribbon snugly around the filling, stand each roll upright on a green plate and finish with a crack of black pepper.
