Freezing the melon in cubes the night before replaces ice entirely, so the slush tastes of pure fruit rather than watered-down juice. Method

Step 1: Cut the melon into one-inch cubes, spread them on a lined tray so they do not touch and freeze for at least six hours or overnight.

Step 2: Let the frozen cubes sit on the counter for five minutes so they soften slightly at the edges, which makes them much easier on the blender.

Step 3: Blend the lime juice, mint and coconut water first until the mint is finely chopped, then add the frozen melon a few handfuls at a time.

Step 4: Pulse and press with the tamper until the mixture is thick and slushy, tasting and adding coconut nectar only if the melon lacked sweetness.

Step 5: Pour into hurricane glasses, perch a lime wheel on each rim and serve immediately with straws before the slush begins to melt.
