Mango Lime Chia Pudding Glass

Mango puree is thick enough to sit neatly on top of a set chia pudding, giving a clean line of gold over white. Lime zest in both layers links the flavours and keeps the sweetness lively. It is a make-ahead breakfast that tastes like a holiday, and the plain glass shows off its colours on a simple linen cloth.

Method

  1. Step 1: Whisk the coconut milk, chia seeds, coconut nectar and half the lime zest together, wait five minutes, then whisk again.

  2. Step 2: Divide between two glasses, cover and chill for at least five hours until the pudding is firmly set.

  3. Step 3: Blend most of the mango with the lime juice until smooth and thick, saving a few small cubes for the top.

  4. Step 4: Spoon the mango puree over the set pudding, add the reserved cubes and finish with the remaining lime zest and shredded coconut.
