Blending a peeled lemon with plenty of mint releases aromatic oils that plain juice never has. Straining it through a nut milk bag leaves a clean, juice-like texture that is wonderfully refreshing on a hot afternoon.

Method

Step 1: Peel the lemons, removing as much white pith as you can, since pith makes blended lemonade bitter, then flick out all the seeds.

Step 2: Blend the lemon flesh, mint, spinach, dates, salt and water on high for about a minute, until the mint is pulverized and the liquid is dark green.

Step 3: Pour the mixture through a nut milk bag or fine sieve set over a jug, squeezing gently to extract the liquid, and discard the pulp.

Step 4: Taste and blend in another date if it is too sharp, then fill mason mugs with ice, pour the cooler over and hook a lemon wheel on each rim.
