Rainbow Fruit Layer Popsicles
4.8(357 ratings)These take patience rather than skill. Each fruit puree goes in as its own layer and freezes briefly before the next one, which keeps the colours crisp and separate. The reward is a tray of popsicles that looks like a box of crayons and tastes simply of ripe fruit, with no sweetener needed on a summer day.

Method

Step 1: Blend the blueberries until smooth, fill the bottom fifth of eight popsicle moulds and freeze for 30 minutes until just firm on top.
-
Step 2: Rinse the blender and puree the kiwis with the lime juice briefly, so the seeds stay whole. Spoon a kiwi layer over the blueberry and freeze for 30 minutes.
-
Step 3: Puree the mango, add a layer and freeze again. Insert the sticks at this stage, once the mixture is thick enough to hold them upright.
-
Step 4: Blend the orange segments, add the next layer and freeze. Finish with blended watermelon, which is the most watery, as the final top layer.
-
Step 5: Freeze the completed pops for at least four more hours. Run the moulds under warm water for ten seconds to release them cleanly.
