Mango Dragon Fruit Layered Slush

Pink pitaya, also called dragon fruit, has a mild, kiwi-like flavour and a colour so vivid it barely looks natural. Paired with sunny mango slush, the layers look like a tropical sunset in a glass. Both mixtures are blended thick so they sit neatly on top of one another rather than mingling right away.

Method

  1. Step 1: Blend the frozen mango with half the coconut water, 1 tablespoon lime juice and the nectar until thick and slushy. Pour into a jug and chill.

  2. Step 2: Rinse the blender, then blend the dragon fruit with the remaining coconut water, lime juice and ice until thick and deep magenta.

  3. Step 3: Spoon the mango slush into the bottom of two tall glasses, then carefully spoon the dragon fruit slush over the top.

  4. Step 4: Add a few more spoonfuls of mango to create a third stripe if you like, then serve right away with spoons and straws.
